Cupcakes are my constant companion in the kitchen, never just a passing baking trend. As someone who bakes often, I never grow bored of preparing them. They’re simple to make, and I always get excited to indulge in them. They're also a wonderful canvas for creativity—perfect for dressing up and making extra special. It turns out I'm not the only one who adores cupcakes—I've gotten plenty of gasps and smiles while entering a room with a colorful box of cupcakes in hand. (Really! Who needs a bouquet of flowers when a box of cupcakes is so much more exciting?) And since cupcakes are meant to be baked, gifted, and devoured in dozens, I’ve got a handful of recipes to keep you stocked up with little cakes for any occasion. My latest episode of Bake it Up a Notch covers all things cupcakes—from the simplest to the most extravagant, I’ve got your cupcake list covered.

1. Basic Vanilla & Chocolate Cupcakes

These are my staple cupcakes: a straightforward base recipe that you can make in either vanilla or chocolate. They rise perfectly to form a lovely, dome-shaped cake with a moist, tender crumb that pairs wonderfully with any frosting or toppings you can imagine! If you want more cupcake inspiration, check out the article I wrote in 2015—it's full of tips, tricks, and fun ideas to make your cupcakes look stunning. What’s that? Yes, I wrote in-depth about cupcakes on this site over five years ago—just another example of how cupcakes are a staple for me.

2. Rainbow Cupcakes

Rainbow cupcakes are a fun variation of my classic vanilla recipe. After mixing the batter, divide it into six small bowls, then use food coloring to tint each one a different color: red, orange, yellow, green, blue, and purple! Spoon the colorful batters into the cupcake pan one by one, making sure each cavity gets an even scoop of color. As they bake, the cupcakes will come out with a beautiful, vibrant pattern. I love pairing these with white frosting like buttercream or meringue, and a generous sprinkle of rainbow-colored sprinkles. If you like, you can experiment with other colors too! Try gently swirling the batters together with a toothpick for a fun marbled effect after baking.

3. Cookies & Cream Cupcakes

These cupcakes put a fun twist on the classic vanilla flavor, incorporating a whole sandwich cookie at the bottom of each cupcake, with crumbled cookies folded into the batter. The frosting, made with marshmallow fluff, mimics the creamy filling of the cookies. For an extra touch, I like to top them off with a mini sandwich cookie or more cookie crumbles. If you have a favorite cookie, feel free to substitute it! Chocolate chip cookies or even your favorite Girl Scout cookie would work great for this recipe.

4. Banana Cupcakes with Caramel Filling & Frosting

These cupcakes are as simple to make as banana bread, but with a delicious twist: caramel. Once baked, they are filled with a rich dulce de leche center, and topped with a decadent caramel frosting. These cupcakes are dense, moist, and full of flavor—possibly my favorite on this list to both bake and eat!]

5. Strawberry-Rhubarb Meringue Cupcakes

You can’t go wrong with a pie-inspired cupcake! This lovely pound cake-like batter bakes up dense, making it the perfect base for a light and airy meringue (toasting the meringue is optional but highly recommended for that extra touch). After baking, it’s simple to scoop out a portion of the center and fill it with a homemade strawberry-rhubarb jam. No rhubarb? No worries—just use strawberries for a jammy filling! Or, take this idea and use it as inspiration to create your own fruit-filled, jammy, pie-inspired cupcakes!

Alaska rivers flow through mountain range

Alaska rivers flow through mountain range

Alaska’s geography contains a remarkable natural feature that makes life in the Interior more accessible and practical. Because of a unique river corridor, residents can enjoy easier transportation routes, receive goods such as affordable bananas, and maintain communities in the challenging subarctic environment. The Nenana River, which begins on the southern side of the Alaska Range, turns around and travels northward through the mountains. Along its path, it created a broad, low-elevation passage that later became an ideal route for the Alaska Railroad and the Parks Highway.

Essentials of Spacewalk Spacesuits

Essentials of Spacewalk Spacesuits

Spacesuits transcend mere apparel for astronauts; they are intricate systems tailored to diverse mission needs. The realm of space exploration employs two distinct types of spacesuits, each serving a unique purpose. While one is worn within a spacecraft during launch, ascent, re-entry, and landing, the focus here is on the spacesuit crafted explicitly for spacewalks, often termed an Extra-Vehicular Activity (EVA) suit by NASA.

Fairies in the Deep, Dark Forest

Fairies in the Deep, Dark Forest

At The Vivid Eye, the aim is to reach many kinds of readers, and it felt like the right moment to focus on a painting that could especially captivate children. With a style and mood reminiscent of illustrated storybooks, Fairies in a Bird’s Nest sparks the imagination of anyone familiar with the enchanted worlds of Peter Pan, Alice in Wonderland, Where the Wild Things Are, or the tricksters and sprites found in Grimm fairy tales. This painting was chosen with the help of a young companion during a museum visit, and its discovery was unexpected: a playful, moonlit gathering of magical beings hidden among otherwise solemn portraits and landscapes in a grand museum setting.
